For this dried Goji berry salad, you will need chicken broth, wheat berries, extra virgin olive oil, walnut oil, apple cider vinegar, and lemon juice. In addition to that you will also need one apple cut into small dices, large scallions thinly slice, one large celery stalk (diced), finely minced parsley, cinnamon and agaves. And of course, the star of the show: our beloved dried Goji berries!
In a small saucepan, combine one and a half cup reduced-sodium chicken broth with half a cup of wheat berries and place over medium heat. Bring to a boil, reduce heat to very low, cover and let simmer for thirty-five minutes or until most of the water has been absorbed and the kernels of the wheat berries are tender yet chewy. Drain any excess water from the wheat berries. In the meantime, whisk a tablespoon of extra virgin olive oil and the same amount of walnut oil, a tablespoon of apple cider vinegar and three tablespoons of lemon juice in a medium serving bowl. Add the drained wheat berries plus half a cup of dried Goji berries, small dices of apple, and two thinly sliced large scallions, diced celery stalk, and half a cup of finely minced parsley to the bowl. Add in a pinch of ground cinnamon toss and a teaspoon of agaves. Season your salad with salt to taste. Then refrigerate until ready to serve.
